Chef Anil Khurana is the Corporate Chef in charge of Indian cuisine at Hyatt and is based in Delhi, a region whose cuisine he has mastered. Also, best known for his melt-in-the-mouth galouti kebab, one must not forget to tuck into it as it opened up a world of fragrant flavours attained from careful marination, attentive preparation and of course, the master’s special touch. Vegetarians can revel in the paneer tikka which some gourmands claim is even better than the non-vegetarian variation. A striking amalgamation of North Indian delicacies served with an artistic touch on a canvas is something to look forward to.
